Ingredients:

2 Cups Unsalted Butter (softened, but not melted)
2 Cups granulated sugar
2 Eggs
1 Tsp Vanilla or Almond Extract
6 Cups Flour
3 Tsp Baking Powder
1 Tsp Salt

Directions:

Cream Butter & Sugar, add Eggs & extract – mix well.
Sift dry ingredients together and slowly add to creamed mixture.

After a few minutes the dough will come together. Divide into 2 or 4 parts, put into Ziploc baggies, chill 2 hours or longer. (can make a day or so in advance – dough can also be frozen). Roll out dough between two pieces of parchment paper without flouring the surface as flour tends to dry out the dough. Cut into desired shape. Place on cookie sheet 2 inches apart.

Bake at 350 degrees for about 10-12 minutes.

Makes anywhere from 36-48 cookies depending on size and thickness.
